Smoked Salmon Tagliatelle – Budget Recipe

I am always on the look out for budget recipes that I can make easily for our family; preferably ones that don’t take too long and don’t cost a lot either! This smoked salmon tagliatelle is a current favourite of ours and both boys eat this quite happily. I call it “swampy pasta” as I buy the spinach tagliatelle so it’s green. Seems to work on a four year old and a one year old anyway 😉

 

This is also a good budget one, as it may contain things in your stockpile. Or, if you don’t have any of the ingredients to hand, they’re fairly cheap to buy. This is a regular on our meal plan.

 

You will need (to serve 4):

  • 250g tagliatelle
  • 150ml single cream
  • 120g smoked salmon (I get the trimmings which are cheaper)
  • 1/2 tsp dried dill
  • pinch chilli flakes (optional)

 

Method:

  1. Add the tagliatelle to a pan of boiling water. Cook for 12 (ish) minutes.
  2. Heat the single cream in a small sauce pan on low
  3. Shred the smoked salmon (the trimmings are usually small enough)
  4. Add smoked salmon to the warmed cream, reserving a tiny bit for topping.
  5. Add the dried dill to the cream mixture, along with the chilli if using.
  6. Drain pasta and put back in pan.
  7. Pour over the cream/salmon mixture over the tagliatelle and stir well.
  8. Divide between plates and put remaining salmon on top.

 

 

This is so simple! I love simple recipes, particularly on a week night when it always seems to be a bit of a rush to get tea on the table in time. If I’m giving to the boys I don’t add the chilli flakes in; if it’s just two adults then I do. That bit is entirely optional 🙂
