Meal Plan Monday #29

July 15, 2019

Happy Monday! I thought I would bring back a popular post that I used to do a long time ago – my meal plan Monday post 🙂 this just goes through what we’re eating this week so keep our food spends under budget. I have definitely honed my skills in this area for a long time now – and have even written a course about it here – so we have very little food waste and our meal plans are cheap and tasty!

Not much planned this week apart from being out on Thursday for a meal and then at a wedding on Saturday. Obviously this has an impact on our meal plan! Not having to buy two meals has meant that food spends have been lower this week but that’s not a bad thing. I am finding that because we have no stockpile to use at the moment, our kitchen cupboards are particularly empty so nothing to fall back on. I am going to have to build our stockpile back up again, slowly 🙂

This week’s meal plan looks like this:

Monday – spaghetti bolognese (slow cooker)

Tuesday – roast chicken dinner

Wednesday – chicken curry with rice (using leftover roast chicken)

Thursday – out

Friday – steak and feta salad

Saturday – out

I do our food shop on a Sunday so I haven’t thought about what we’ll have next weekend! But I’m looking forward to the meals this week. Both boys will eat the same as us on Mon/Tues/Wed and then have something different on Friday. The steak is actually in the freezer but needs eating so that’s just for Mr FC and me.

For my lunches this week I have got more salad things, as per my aim for July. I am hoping to use some of the leftover roast chicken with some salad this week as that will be tasty. Then I’ve got fruit and yogurts to go with that. Breakfast in our house is just cereal; either wheetabix or shreddies with banana. Goes down well with everyone and fairly health + cheap!

Part of our planning and budget for food means that some items are used from our stockpile every week. This is so the food we already have in the cupboards is used regularly and rotated so nothing goes to waste, but it’s also a good habit to get in to so that if we cannot get to the shops for whatever reason, I can make meals from what we already have in the cupboards. Using a combination of fresh and frozen food really keeps our grocery budget down. As before, the steak is from the freezer but I do need to start buying items to have in again. I quite enjoy doing this!

For the first time in ages I have written plan of meals I can cook over the next fortnight or so. No set day for a meal as we often have left overs or appointments that run over time etc. It is winter in Australia so heartier meals are planned. I have taken stock of what I have in the house and think I will only need to buy some more yogurt and milk and perhaps after 10 days or so some potatoes.

    Tomato and lentil soup
    Pumpkin soup
Sweet potato soup possibly This style
    Potato and leek soup
    Chicken and vegetable soup
    Risotto
    Salmon and salad
    Homemade salmon pate
    Roast lamb and vegetables
    Cauliflower cheese with bacon crumb
    Quiche
    Roast chicken and vegetables
    Hamburgers
Potato, cheese and onion bake with poached egg
    Spaghetti puttanesca
    Pumpkin lasagne
    Savoury pancake stack
Sausages with vegetables and tomato and onion gravy
    Pizza
    Homemade bread
Porridge with dried berries or cherries
    Bacon and eggs
    Welsh cakes
    Scones
    Brownies
    Custard
    Poached pears
