Easy Egg Fried Rice

Another recipe post today! This easy egg fried rice is so good and so simple. It’s great as an addition to lots of things, or as a main if you add in some veg. I love having easy things to make in my repertoire; it makes planning meals easier. Plus, if it is easy and tasty, then it’s a win all round. Both of my boys love this as well – which is always helpful! One of my favourite takeaways is a Chinese and I love getting honey chilli chicken with fried rice, so I thought I would try and create a part of it at home.

 

There is some slightly preparation to the dish; it is best to cook the rice and complete cool before frying it. However, I often don’t do this as it means extra planning and, to be honest, I forget. Then, when I’m cooking tea I then remember I’m supposed to cool and then fry. It doesn’t matter – it tastes slightly more authentic but cooking and then frying is good too. Trust me, you are going to want to try this!

 

This is also a good budget one, as it may contain things in your stockpile. Or, if you don’t have any of the ingredients to hand, they’re fairly cheap to buy. This is a regular on our meal plan.

 

You will need (to serve 4):

  • 250g rice
  • 1 tablespoon oil
  • 4 medium eggs
  • 2 tablespoons soy sauce
  • 1 heaped teaspoon Chinese 5 spice
  • 100g petite pois

 

Method:

  1. Cook the rice as per the packet instructions. Leave to cool
  2. Heat the oil in the pan – sesame if you’ve got it but anything will do 🙂
  3. Add the rice and the peas
  4. Fry for a couple of minutes; the rice needs to get a bit crispy at this stage
  5. Meanwhile, whisk four eggs in a juba’s with a splash of milk
  6. Add the eggs to the rice/peas mixture and stir
  7. Add the soy sauce + Chinese 5 spice
  8. Stir occasionally, until the egg is cooked

 

There are a couple of extras you can do – if you want to. You could add some chopped spring onions to the frying pan first before adding the rice; it gives it a different depth of flavour. You could also add in prawns or chicken to make this a more complete meal. I often serve this easy egg fried rice with my sweet chilli salmon and some steamed broccoli. It is SO tasty 🙂
