Foodie Friday: Cinnamon Shortbread

A little tweak on an old favourite, this is a perfect biscuit for the festive season. Pair these with a cup of tea, a Christmas film and some candles, and you can’t go wrong!

 

I love shortbread. In fact, I actually have to restrain myself from eating the whole tray, especially when they’re still warm from coming out of the oven. This version actually makes the house smell like Christmas Day, with hints of cinnamon and that warm, biscuity smell that comes from baking shortbread. Seriously, these are that good! In fact, I may have forgotten to take a picture as I was too busy eating them.

 

Ingredients:

– 8 oz butter

– 4 oz caster sugar

– 12 oz plain flour

– 1 tsp cinnamon

 

Method:

1) Heat the oven to 190C/375F.

2) Cream the butter and sugar together until combined and smooth.

3) Stir in the flour and cinnamon into the butter/sugar mixture. You can use more cinnamon if you like, this is just how much I like!

4) Tip onto a work surface and roll out until 1cm thickness, approximately.

5) Cut into either triangles or fingers, then place on a baking tray. Sprinkle with a tiny bit of cinnamon, then chill for about 20 minutes.

6) Bake for 17 minutes, then leave to cool on a wire rack, if you can leave them!

 

These would look great in some wrap and a bit of festive ribbon – a perfect homemade Christmas present! This costs pennies to make and is so tasty.

    I have tried this in one Bread Shop nearby. The cinnamon shortbread tastes really yummy! Thanks for giving me an idea about making this a Christmas present. 😀
