Bacon, Pea and Mushroom Risotto – Slimming World

One of my 2018 goals is to lose my pregnancy weight, so at the beginning of the year I joined Slimming World. I did the plan after having Frugal Toddler, and so am doing the same thing after Frugal Baby arrived. The plan works if you stick to it – I lost 5lbs this week just by sticking to the plan and being organised 🙂

 

I thought I’d share one of my favourite recipes to date – I’ve tweaked a risotto recipe full of butter and cheese to this one which is syn free on the Slimming World plan. It’s also quite a budget friendly one, depending on what you have in your stockpile. We always have risotto rice in the cupboard.

 

You will need:

  • 150g risotto rice
  • 500ml vegetable stock
  • 4 bacon medalions, cut into bite size pieces
  • 100g frozen peas
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 8 large mushrooms, sliced

 

Method:

  1. Spray a large saute pan with light cooking spray
  2. Lightly fry the onions and garlic for 5 minutes
  3. Add the mushrooms and bacon and fry for another 5 minutes
  4. Add the rice and the stock, then bring to the boil
  5. Reduce to a simmer for 15 minutes, covered
  6. Add the frozen peas for 3 minutes
  7. Season to taste, then serve!

 

This serves 2 people but can easily be doubled to serve a family of four. If Frugal Toddler would eat this I would give him it too, but he wouldn’t.

    Hmm I would leave the bacon out but other than that YUM!

    I would substitute a seasonal vegetable for mushrooms and possibly add carcase pickings from a Sunday roast chicken in our house.
