Meal Plan Monday #18

It’s Monday which means it’s meal plan time! I must apologise for the lack of posts over the past week; the Frugal Baby has got a horrendous cold and cough which means that he’s really been struggling. His cough has been keeping him awake at night as it’s worse when he’s lying down, which means that sleep for all of us has been thin on the ground. During the day he’s really restless and quite unhappy, so he’s been really clingy this week and hasn’t let me put him down to play or anything. It really restricts what I can do! It’s my last week on maternity leave this week too 🙁 and I think we’ll be spending it mostly inside trying to get better.

 

I normally do our grocery shopping on Sunday morning whilst Mr FC has some quality daddy-baby time with our little one, so I can take my time in the supermarket. I actually enjoy food shopping and browsing round the store, though I make sure that I stick to the list that I make before I go. Making a list means that I don’t buy things we don’t need, plus ensures that nothing gets thrown away. I’m starting to get a bit fed up of the same meals each week, so I think I’m going to need a shuffle around of food soon. I do love the burgers in lettuce wraps though; here’s a picture of the sweet chilli chicken burger and salad we ate last week:

So, our meal plan for this week is as follows:

Monday – Tuna and courgette fritters with salad

Tuesday – Minute steaks with a kale and cherry tomato salad

Wednesday – Cheesy chorizo chicken and spinach

Thursday – Sweet potato wedges with eggs and bacon

Friday – Jacket potato with cheese and beans

Saturday – Chicken stew with mash and green beans

 

Lots of things on this week’s plan are meals we have had before, so we know that we have lots of tasty meals to look forward to this week. The tuna and courgette fritters are a new thing to try, but the Frugal Baby can also have them, so we can enjoy our meal together 🙂 he hasn’t quite mastered the art of feeding himself yet, so it tends to get very messy. I guess that’s part of the learning process!

Meal Plan Monday 18

 

Breakfast and lunches are included in our budget as well; breakfast is normally a banana for Mr FC. We’ll have to be more organised with lunches this week, especially for Mr FC as he has to have his on the go. We’ve bought eggs for hard boiled eggs, plus some chicken drumsticks that I’m going to roast in the oven so he can take with him. I am going to make some rosemary roasted almonds for him to take as a snack this week. Then raw vegetables will have to make up the rest of his lunch. It’s more of a grazing type style during the day but is surprisingly filling considering it’s not a particularly large amount of food.

Part of our planning and budget for food means that some items are used from our stockpile every week. This is so the food we already have in the cupboards is used regularly and rotated so nothing goes to waste, but it’s also a good habit to get in to so that if we cannot get to the shops for whatever reason, I can make meals from what we already have in the cupboards. The eggs and tuna are from our stockpile and all of the meat is from the freezer this week. We bought a lot of meat from Muscle Food a couple of weeks ago and are working our way through it.
